I was testing out the DI from my Rumble 200 into Cubase 8 and I loved the tone. I shot a little video to showcase it. If anyone is interested this is the amp flat, drive about 1/2 way up, and a Squier VM Jag SS with new La Bella Quarter Rounds drool
Not sure if anyone remembers I got robbed of most of my SWR cabs and both of my SWR amps, among other things about a year ago. My rumble 200 was somewhere else and survived, but I had no suitable cab to use it with. Several months ago I was fortunate to get @honeyiscool 112 cab to make my small rig complete, but my "big" gear only remained my SWR Goliath III 4x10, and acoustic b600h "backup" head...
Well opportunity knocked recently, and I was able to get something to make up for the loss of son of Bertha 115 and Goliath Jr II 2x10. A Goliath II was on craigslist for $110, pretty long drive, but I could not pass that up.
During the test drive (once the phlegm got coughed out of the long unused gain pots in the b600h), the beautifully crisp foster horn cuts out. Yeah we operated on it, after a couple of hours with a volt meter, it appeared that one of the caps fried and he offered $10 off. Of course I took it, even if I don't fix it, I still have a working horn in my GIII, which will end up on top because the GII is significantly heavier and he installed large casters. This cab sounds great, but it will surely live in storage until a gig that rumble 200 can't handle comes up. But I feel complete again, having a full rig in the arsenal again. Both my stolen swr head and the acoustic were 2ohm stable, so if I wanted to get really obnoxious, the rumble 112 could always go on top.
She is a bit ugly and dusty, and has a weight problem, but you can't argue with $100, all original drivers (PAS I believe).
She's on the bottom, top I bought new back in 98 (which is what stings hardest losing the matching Bertha, but at least the MDP won't bother me)

The tone, volume and dispersion of the two configurations will be nearly identical given the same amp, speakers, and cabinet volume. The head and 2 cabinets lists at $1,100 while the combo and one cabinet lists at $950, however the head and two cabinet configuration is more versatile.

You omiited one option I will include for price comparison.
1) Fender Rumble 500 Combo with one 2x10 Rumble extension cab
Combo is 599
2x10 cab is 299
Total is 898
2) Fender Rumble 500 head with two of the 2x10 Rumble cabs2x10 cab is 299
Total is 898
Head is 399
2 2x10 cabs @ 299 ea is 598
Total is 997
2 2x10 cabs @ 299 ea is 598

So it is obvious #3 is the most economical and #2 is the least economical.
As to sound and dispersion, I would say they are all about the same.
Some will argue a pair of the 1x12 cabs @ 299 each would be better, but I don't know as I haven't played not heard that combination. That would put you at the same price point as #2.
Overall, I would think #3 would be a good choice for price and portability.
