I've got the same amps (plus a 400RB) but with Neo410s. No GAS either. If I got anything, it'd be another GK, though.

Ok, GK brethren, here's the choice: Fusion 550 or MB Fusion 800?
I already own the Fusion 550(some of ya' may remember the heart-warming story of how I came to be the current owner the Fusion 550), and I really dig it, but I fully, and completely, under-estimated my desire to schlep a rack with not one, but two, GK amps(I also have a 700RB-II). Like I said, I like everything about the 550 but the weight. So, I'm thinking about parting ways with F550 and going to the MBF800. Good idea? Bad idea? I'd love a little more power, and a LOT less weight, but I really dig the sound...

The Fusion 550 is more plush and round down low than any other G-K I've tried. The MBF800 won't biamp G-K cabs.
Other than that, IMO, it's all down to what you want and like.

I'm looking at a GK700RB-II to replace my Crate BT350, I have a 4x10@8 ohm plus a 1x18@8 ohm cabinet I'll be running it through. Will I be OK with that setup?
You'll get many here that will say to match cabs. The amp can push these two yes. Is it a recommended combo. No.
However I have run a combo like this but it was a power amp driven beast with Bag End cabs. I could adjust the output to either cab for a balanced volume without over driving the 18.
Unfortunately I can't change out my cabinets anytime soon. Would I be better off with the MB500?
Won't make any difference regarding how well the cabs will or won't work together. Those amps sound quite different from each other however. RB is more traditional GK where MB is more modern sounding.
I think I'll need some sort of bass glossary because I don't know what half of these adjectives mean.
You'd be better off using just the 410. The 700 still provides plenty of power -- and volume -- at 8 ohms.
I've thought of starting a "dictionary" thread on here for that exact reason! It can cover terms, shorthand abbreviations, give some example of "plush and round" or "pillowy", etc. I think it would help!

They might not either, but to just say out of hand it's a fail is pretty presumptive
And, for me, the 700rbii didn't have enough clean power, so I sold it and got the 1001.
I fail to see why my cabinets aren't matched; many bassists run a 4x10 and a 1x15 (though mine is an 18 instead) and they're both 8 ohms.
Wow that's a lot of post since I joined the club back in 2007 and I'm still using my 400rb iii 2x10 combo!
That's not what everyone is referring to when they're talking about "matched" cabs. In your case, having "matched" cabs would mean having two 410s or two 118s, not just two 8ohm cabs. If you have two of the same cabs, the chances are pretty good that they will work together and sound good. That's not always the case, but more often times than not, two identical cabs will sound better than two cabs that have different sized drivers.
Conversely, just because the science says that mismatched cabs will, more than likely, not sound all that great, your 410 & 118 mismatch might sound awesome. And since you already own them, makes sense to give them a try. Just be aware, it might sound awesome to just you...
You got me there. You're right: Try the cab combo and see. I'm merely suggesting the 410 may be enough.
As for the 700 v. the 1001, he's coming from a 350-watt Crate, the 700 at 8 ohms should be comparitively plenty loud.
