Deadsters have become quite sophisticated and are going to notice the difference between a 74 jazzy feel and a 77 feel, and so on ... odd meters, lefthand chord changes, chord substitutions out the wazoo ... done right it'll pay the mortgage. It seems to me a NRPS cover band would have a great deal more freedom, and still draw from the same well. It sounds more fun.
One potential drawback is that someone actually has be able to sing. Not that some members of the Dead couldn't, but they always tended to croak in a more literal sense. There's also a whole lot less material to learn and play, which could be a bonus I guess.
Good pedal steel players are also very rare and tend to command serious dinero.
