Ummmmm.... -Breakfast in Fayetteville; -scrambled eggs and crawfish! Yum! Followed by a delightful State Park excursion where a wonderfully exuberant and talented musician described and performed three different kinds of Cajun music for us..! -IMO not even counting New Orleans, LA is still the best music and food State in the USA!

Not that anyone gives two shoots, but I think it looks fantastic! Reminds me of the most excellent "arròs negre" (paella) that I ate in Valencia at the fine dining restaurant in the hotel I lived in.Next time you get the urge to post something like that - don't.

I'm all for trying regional specialties. But I don't fall for that "try a sheep's eyeball" trick they pull on the rubes.
Oh, and not every region has a regional specialty. Kind of out of luck for an unusual treat when on site in rural Kansas. What happens in rural Kansas is the discovery of one restaurant that approaches decent (even if on the low side) and eating there exclusively out of self protection. Pretty soon it becomes a bit ... difficult to enjoy.

This is a pretty cool documentary on an octopus that was raised by a biologist. It was on the PBS Nature series.

{GOF rant}
I was a vegetarian for 6+ years after my resection surgery. I had to spend a few days in Kansas upgrading comms on our pipeline (Amoco Oil). The ONLY seafood product I could get in the "restaurants" in western Kansas was frozen fish sticks. After a few days of those, I tried a steak for the first time in forever. Tasted fantastic. Made me sicker than a dog. I have never been able to eat fish sticks since. Took me a couple of years to get to where I could digest meat again. That wasn't a fun journey, either.

For the record, I've recently learned that stress tests ain't that reliable! At least not the nuclear stress tests. Treadmills? Maybe, I dunno.
Myself and a friend both failed our nuclear stress tests (in different states at different times) and were sent post-haste to the Cath Lab for heart catheterization to confirm extent of blockage! We both had 0% blockage and our doctors just shrugged that, "Stress tests are just another screening.
Catheterization is the only reliable test, but it's more invasive." 
Another friend passed his bloodwork and nuclear test ordered by his PCP with flying colors! But his cardiologist interview, where his wife kept butting in with stuff he 'forgot' but confirmed, sent him straight to the Cath Lab, do not pass "Go", do not leave the building, where they found 99% blockage. He had a quadruple bypass that same day!
A word to the wise.

First, ask if the treadmill is more accurate than the nuclear. It might not be so, in which case the exercise ain't worth it, IMNSHO. The treadmill tests in my 50s, about 17 & 11 years ago, really kicked my everloving be-hind, ... hard! Silly me, I kept going 'cause they said to, way long after wanting to stop! They found no problems, which I think would have been quite self evident if there had been any. The nuclear test this year was like taking a nap.
Either way, it's my belief in bureaucracy that you gotta have some kinda stress test, good or bad, to qualify to get a conclusive angiogram in the Cath Lab. Just depends on the cardiologist's confidence in the stress test, which seems to depend on your answers to certain questions!
OH! And tell 'em you wanna insert the cath in your wrist instead of your groin, for quicker recovery (besides the obvious resons). That is, if they think the blood vessel in your wrist can take it. I swear I felt a scrape inside my shoulder, where the cath made its turn, for two days after! Maybe wouldn't have had that from the groin, but I'll take it anyway.
