Depends on the steakhouse. I can get a nice 16 ouncer well done,and not dried out at Ruth's Chris Steakhouse.Any other place I usually go med/well to medium.

If your going to eat a steak, eat a good steak, cheap is a waste of time. I like the blood, I dip other food in it. like potatoes, or dinner rolls.

OTOH, sometimes a sauce is good too. A local place out here does a tenderloin with fried leeks and a gorgonzola sauce that is unreal.

I worked for a butcher when I was a kid, and he introduced me to Steak Tartare. Quite tasty rare beef when fresh and prepared properly.
