I love eating out in Northampton. La Veracruzana (a rarity--great Mexican food in New England), the Northampton Brewery, Wiggins' Tavern, etc.

And anybody who likes raw spinach. That is, if they can get outta the bathroom.

I like mine medium rare to medium. Seared 2 mins per inch thick. turn down to medium heat. Then 3 mins, flip, 3 mins. Ribeye is my favorite.

Most places overcook steak by one notch. I like it medium, thus I order it medium rare. 99% of the time, that's how it comes.

You should be able to taste the meat.

Burgers - medium well.

Depends upon the cut:

Steaks - Medium-rare
Roasts - Medium well
Ground meat - well done

Incidentally, the red juice from meats is not blood, it is myoglobin, a red pigmented protein that is found in muscle.

The beautiful part about chicken is it can go with just about any non-sweet (and even a few sweet) dishes you can think of.

That's why I prefer chicken to any red meat, and just about any meat in general.

It's the only meat I don't get tired of.
