how to handle a jeering crowd

It depends on the reasoning and circumstances. There is no universal answer, just as there is not one type of displeased crowd.
Why even go there in the first place? You're not exactly demonstrating a lot of self-confidence here...

Encourage them to hurl abuse at you for the next 5 minutes. Do your worst! Is that the best you can do? Last night they were much more insulting... After a few minutes say "times up" and go on with your show

I can't think of many situations when this advice doesn't apply.
Pick out someone right in front of the stage and hit them on top of their head with your bass as if you were splitting wood with an axe. If you really put some heart into it you will probably kill him, after that everyone else should pretty much fall in line.

My old metal band played a bar show with the epitome of what you could call a bar band, to a crowd of either middle aged rednecks, dudes in tapout hats and UFC shirts that thought we were "fags" for wearing "tight" pants and screaming, and people who wanted to enjoy a nice evening at the bar with a band playing. The moment we started I could see in most peoples eyes the animosity they were feeling towards us for ruining their night out. Their was a table of bros at the end of the stage that I was watching mock us so any time one of them looked over I made eye contact and didn't let it go until they looked away. I mocked people, and we played the longest set we possibly could.
It was hilarious.

That's exactly what I was thinking.
Given the desparity in the amount of firepower there's no excuse. A little bit of wit and humor at the expense of the heckler can turn most crowds around.
Go Don Rickles on 'em at 105db and get them laughing then, go back to work.
