It's Chili Season!

Sides, Sides,Sides, C’Mon Man it’s not a snack, it’s a Meal! Just going over the list here.
1. Jalapeño Corn Bread
2. Cabbage Salsa
3. Roasted Corn on the Cob(on the grill)
4. A good quality (medium or hot) regular salsa. Just put a touch of Pineapple in it. Easy does it.
Anybody got a number 5? I’m sure I left something out.
 
I eat my chili with just some nice crusty white bread (Italian, French, sourdough) and some shredded cheddar. When I serve to others, I set our some diced onions, and a variety of added heat sources (diced jalapeños, jalapeño powder, and two or three hot sauces) and Fritos for making Frito Pie. Other sides are nice if someone else wants to make them.

It's been in the 30's and 40's this week, and that means time to make chili. Here's our first batch of the season. We mixed it up and replaced some of the hamburger with chorizo at the recommendation of our butcher. It's good, but we probably won't do that again.
Around the edges of the bowl is sharp cheddar slices. I was trying to be fancy, haha.

I get the fancy-ness. I always like to arrange my chili in a fun way :D

So, we were supposed to have a chili cook off at church this weekend, but it was canceled due to not enough contestants/interest :bawl:

Well schucky darn. That woulda been fun to participate and partake.
I think I need to rally my buddies and do a chili cook off during one of the holiday days off.

Option 1)
Wendy's Chili

We left out the celery. I don't see celery (or green bell peppers, as listed in above posts) as a viable chili ingredient.

This is, in my experience, a crowd - pleaser. My son and his friends approve and always asked for seconds.

Option 2)
My aunt Shari starts by adding a large can of pre - made chili to a crock pot, then just adds additional ingredients that fit.... browned ground beef, stewed tomatoes, pre-cooked beans of your choosing, spices that add to the flavor, etc.... Think in terms of making the chili more hearty and tasty to the canned version. It works well.

Wendy chili is made with ground up left over hamburgers.
 

The thing about no beans in chili is that beans release a chemical while cooking that causes the chili meat clumps to fall apart and the chili becomes soupy and runny.

As long as you confine your perversion to your own bowl, it's OK to put beans in chili. In other words, use a separate pot to cook the beans, use separate utensils than are used for the chili, mix your beans in at the table rather than at the stove, then it's OK. Even the most ardent chilihed will likely let you off with a little (more or less) gentle teasing. You're only in actual physical danger if you should attempt to sneak your beans into the main chili pot and so mess things up for everyone else.

But there's plenty 'nuff beans in Tex-Mex cuisine anyway, pintos, black beans, boracchos, etc. One meal without beans won't hurt you.

I speak of course about real Texas chili, not the various stews, soups, porridges, sopas, caldos, and pastas that people who've never seen a ristra sometimes label chili - despite having no chili peppers a'tall in them!
