Kitchen Bassists Club!

Alright brothers I need some creative help here. Tomorrow my chef wants me to either come up with a sushi roll or a composed salad using lobster and grapefruit. I feel like I'm on Chopped.

Sushis not my forté but I feel like he'd be more impressed with that over a salad. I'm gonna research some ideas tonight but Id appreciate any help y'all could give me too!

Roll the lobster with some pea shoots or bean sprouts, a thin shaving of fresh jalapeno or horseradish, and toasted sesame seeds. Add a thin slice of grapefruit as garnish.

If possible id like to incorporate the grapefruit flavors a bit more. I thought of doing candied rinds in the roll for alittle sweetness with watermwelon radish for crunch and some julienned ginger for a little bite.

Maybe a grapefruit honey sesame sauce...
 
OK...so:

1) worked as a dishwasher though High school
2) Love to cook (wife admits I am a better cook than she is)
3) cook a couple of times a year for 50+ people at church functions (not just pot luck..."good food mind you!)
4) would open a restaurant if they were not so risky
5) been called a food and adult beverage "snoob"
6) Food network is amoungst my top 3

do I qualify?

Not unless you make a living doing it. You can still hang out tho :D

Grapefruit is tricky personally I think it can be used in a couple of ways the best two being marmalade or candied and the best way is obviously segmented on a crudo, ceviche or sashimi plate. The problem with cooking citrus is the the rind gets more bitter the more it cooks so I usually prefer serving it uncooked. You can boil the hell out of the rind multiple times and make a decent candied or jam product, you can also dehydrate the skin and make a dust. A vinaigrette is a good way to utilize the juice, I really like to make vinaigrettes with citrus and I like using Peruvian chiles in them for their bright colors and depth of flavor.

Anywho I've been thinking about tattoo desigsns and I've been doing some doodling. Thought to myself...what better than to combine two things that I love! Cooking and pin-up girls.


Heres what I've got so far, I'm going to send this rough idea to the tattoo artist and have him do the face and fix any scaling problems, also not sure if I wanna add a chef hat or not...
