How difficult would that be ?

Assigning MIDI should be easy. There’s a list of all the CC mappings in the manual. The launchpad appears to be buttons only - you may need a controller with knobs/sliders. There are cheap iOS apps that have this functionality such as Knoblab.

Yes, just use Mono mode and set the Modulation all the way to zero.

However, I'm not sure if there is an app for the watch that controls MIDI over bluetooth.Is it possible to load an app on the Apple Watch to change pedal presets? Game changer if that can ever be done - imo. Doesn’t even need full parameter control, just a basic preset switcher.
Yes, you do get unlimited presets this way, but the app you are using needs to be able to handle MIDI Sysex. Simple program changes (PCs) are used to recall a preset inside one of our pedals, but sending and receiving full presets is done via MIDI Sysex. Totally possible though. In fact I do this exact thing every day to back up presets I like to my laptop. Every time I come across a sound I like I just store it on my laptop. Really handy. This guy is a hero. He is using a Bluetooth MIDI adapter with the Meris MIDI I/O to control all four

can anyone tell me if the empress midibox will do the job? It’s the only midibox I found available here in France ....
I use the Empress MIDIBox2, the one you show won't work. The MIDIBox2 requires changing one resistor per channel to make it work.
