Probably red. Though sparkling white is also good too...
The Valley side is most famous for Pinot Noir, which is consided world class. The western Gorge has lots of whites, further out you get more into the classic big reds and my favorites, Italian varietals like Sangiovese, Barbera, and Nebbiolo. I'd suggest just waiting and seeing where the weather is nicest when you get into town.
