I think I would go for the 12's if I was certain that they will be as punchy as 10's are. I would need 2- 8 ohm cabs that can handle 1000 watts combined.

I think that 112 cabs with a very powerful woofer, like the Kappalite 3012LF, will be competitive with a "conventional" 210 in punchiness, but cannot say for sure. Bass players who have experience with both would be in a better position to comment... I'm not actually a musician.
As for 1000 watt/pair power handing, real-world very few 210 cabs can handle an honest 500 watts without farting out. Fartout generally sets in when the voice coil starts to travel beyond its linear range. The more air a cab can move without going non-linear, the louder its bottom end will be before fartout (I'm making a few simplifying assumptions here).
Let's do an example. The Eminence Deltalite 2510 is a high quality neo-magnet woofer that has good excursion (better than most), and it's rated at 250 watts each. A pair will displace 294 cc before they go non-linear (displacement = cone area x linear excursion). The Kappalite 3012LF is rated at 450 watts, and has a linear displacement of 496 cc. This translates into about 3 - 4 dB higher SPL from the single Kappalite before fartout sets in.
So in the real world, despite the higher power handling rating and higher efficiency of a 210 cab with two Deltalites, a cab with a single Kappalite 3012LF will go louder in the low end before fartout sets in. I have customers who've posted that my Kappalite-based 112 cabs seem to be competitive with a 310 in useable SPL, and that would probably apply to other Kappalite-class 112 cabs (Greenboy, Baer, LoPhat, etc.).
Now I'm not saying displacement is the only yardstick that matters for comparing bass cab performance, but it's one of them, and imo is arguably more useful than comparing power handing or efficiency or claimed low-end extension, all three of which are often measured with optimistic yardsticks.
