Yeah, but those bands were obviously trying to "make it" from the get go. They were hungry and were willing to play for squat. Some of us (myself included) have no aspirations to be a star; we look at it as a small time business (which it is) and want to make a few dollars. If a third party is making money off of me, I want a cut of it. I was a business student in HS, I went to a business/computer college afterwards, and I'm currently starting a small business. One of the most important things I've learned in business is ethics. Ethics help secure the intergrity of capitalism and some club owners are not ethical. Taking advantage of someone's skills (music) to make money off of them and then not paying them is not ethical, plain and simple. Believe me, I'm one of the first people who talks about "paying one's dues", but when you step inside a bar and your pupose to to increase that bar's drink sales, you should be given just compensation for your service.
