Lol, oops. Speech to text...Avoid the Pantera in Texas. They have Cowboys from Hell
I've had my very first smart phone for about 2 weeks ( Ok, yeah I get them now... ) And I am a fat fingered newb on texting. My two daughters and my gal are having a riot getting me to text them my special brand of auto correct gibberish. . .
You will get better results if you over enunciate. I'd say if I'm just shooting from the hip, as I am now there's about a 60-40 chance that it's going to be right.

I have an I7 Plus I suppose I missed out? Although the Map feature sending to other I phones has been a revelation.
when the keyboard pops up for you to type in your various activities, you might see a little microphone to the left of the space bar where on the keyboard somewhere. Hit that and then start talking and see what happens.
