There have been times I've found a new band's CD that I've liked a lot, only to find out that it's a later release and that their fans think they sold out with it. Most times I get the earlier one based off of the newest and it turns out to be crap. Evidently, writing better songs and taking longer than a day to make the record is selling out.
In life they say $$ isn't everything.. BULL$hit! There's nothing you can do in this world without it unless you wanna live like a cave man or homeless. With that said when it comes to music or a band I know I speak for a lot of musicians when I say that all we want to do is play our instruments and jam. We don't want to work! It cuts into our music time. Bills need to be paid. We need electricity for our amps and we need the internet for everything these days. We have to eat, need gas to get to our gigs, band practice and the music store. When it comes to music the term selling out will never effect me. I write from the heart and however it comes out its gunna stay that way. To me if I were to make it to sign a contract with a company,playing Infront of 25,000 people every other night, making millions, living in a beautiful home having the freedom to do what I want all generated from music. Doing what I love, playing my instruments, jamming with a band playing a show. Money is just the bonus. Selling out is a stupid term. If your dumb enough to turn down money your an idiot. Life is money. No ONE can make you do what you don't want to. You don't have to change your music for no one.

It’s almost two years later and I still would be happy to “sell out” for a stack of cash To play bass than go to my day job!
But with the current reality of COVID-19 and NO gigs for who knows how long......
I read this quote as “art and artists should be valued more in our society” but FZ was a special case anyway, he owned his own world-class studio and was a savvy businessman in his own right, so had fewer middlemen around him with their hands in his pockets. Plus he was a total workaholic so had more product in the market at any one time. All this meant he could totally do his own thing and make money doing it.
It’s interesting to compare music to other creative forms though. Changing your style radically for a band is “selling out” but is often known as “finding your voice” for a writer, comedian or filmmaker.
Probably those Manowar statements of "death to false metal" didn't help.
Personally I don't think it's worth any of your mental energy.
Some bands play music designed to sell. They make the audience happy and sometimes even make money.
Some bands play niche songs they find satisfying to play and make themselves happy, maybe some audience too. They are unlikely to make money.
Most are somewhere on this spectrum between the extremes and it's their business to decide why.
Being "true" to a genre to me is like saying you will paint but only use certain colours. Its just limiting.

Is "selling out" is even a concept anymore is it to anyone younger than 40? I remember thinking the Chili Peppers sold out back when they did a Nike TV spot. Now we have Henry Rollins narrating Infinity car ads and it's no big deal.
