I'd have to select the folders by hand, so no drag/drop...but I'll give that a spin. I like iTunes, I like the layout and the usability, just not the other things it installs...

and simple backup programs I can use?

But in terms of drag and drop, did you know that you can drag from iTunes to a folder, and the app will copy your song files there?

So, speaking of music software, you should try Foobar2000. It's free, it supports a lot more formats than iTunes (including .flac) and there's a bitchen format conversion feature included.
