Same here in Eastern Canada, I left it 3 days with clamps to let the glue dry. I also filled some cracks with that same yellowish glue and it took 2 days to dry completely.I'm in mid Michigan. And my woodshop is in the garage. It has been +80% humidity for the passed week and a half. So I leave my glue ups clamped for days.

i'm glad someone else appreciates some of those necks.Those Chinese necks are not that bad after all but they quite often require a bit of work to make them fine.
