Made some pulled chicken sliders last week. Pretty simple. Cook boneless chicken breast on low for 4 hours in chicken broth. Remove and shred it with a fork when it cool. Add chicken back to crock pot with your favorite barbecue sauce and cook on medium for half an hour.
Here is my favorite barbecue sauce recipe:
1/2 onion, minced
4 cloves garlic, minced
1 tsp vanilla extract
1/2 tsp ground black pepper
1/2 tsp salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup apple cider vinegar
2 tbsp liquid smoke
1/4 cup Worcestershire sauce
1/2 cup brown sugar (I use coconut sugar for a lower glycemic level)
1/3 tsp hot pepper sauce* (or to taste)
1/tsp lemon juice
In a large skillet or pot, coming the onion, garlic and vanilla.
Sauted onion and garlic in a small amount of butter, stir in vanilla
Add remaining ingredients and bring to a boil
Reduce heat to medium low. Simmer for 20 minutes
