Moving on the idea of @catcauphonic I thought I’d start a thread dedicated to our gastronomic adventures. Have a pic of a dish you’ve made? Post it here. Adult libations you enjoy? Post them here. Fancy (or not) sweet creations? Post them here. Have a question regarding technique? Ask away. Question on wine or beer pairings? Ask away. Cocktail recipes or pics? Let’s see them. I’ll start.

Crisp up 4 Chopped (I like 1/2" squares-easier to eat) corn tortillas in high temp oil in steel pan. The Crispier the better.

Move to large non-stick pan that has a light oil coating. Medium flame.

Blend 6 eggs, 1/2 jalapeno, 1 Serrano chile, and two teaspoons of water,depending on taste and heat.

Pour and stir onto crispy tortilla chips. Add desired salt.

Cook on medium low. Put a top on the pan.

Let the evaporating water cook the top.

Check under the edge of eggs to make sure it's not over done- it'll probably get a bit brownish.

Serve top side up so it's nice and yellow color. I use a 6" wide spatula to cut and serve.

For me, no need to add salsa. It's also good with avocados on the side.

Nice. Like a riff on a Spanish tortilla. Interesting with the chiles blended into the eggs.

I used to sauté the Chiles separately but in the interest of time and due to chili fumes making everyone cough, I started blending them raw with the eggs.

Major side benefit - you get a little bit of heat in every bite!

You can also add cheese, chopped sweet peppers and sautéd white onions(yellow are too strong for me).

Win-win.

That crossed my mind too, but I really feel migas need to have the chiles diced and tomatoes added. Cilantro doesn’t hurt, either. And it needs to be scrambled. But yeah, the vibe is def there.

Whoa, what? That sounds like the Tex-Mex version. When I make them, it is more along the lines of traditional Mexican, but I also know migas can vary from region to region and the ones from Spain are different still.
