A classic. I've seen this one on a license plate before.
As I said I'm not a drinker so I'll definitely need help coming up with the name, but I'm open to it.
An EQ pedal named something along the lines of “The Fermenter” would make sense.

Every time I have to deliver bad news I like to precede it with some good news, so the good news is I just verified the London Underground X and it sounds excellent. I'm 3 for 3 with X Series, I'm hoping to get the Lab Rat X (admittedly more of a novelty for me than anything I plan on selling tons of) done tomorrow, and wrap up the whole X Series in glorious triumph.
The bad news is I already found something that's going to need to change for the Deep Dish, and I haven't even finished it yet. One of the potentiometer values in the original is one that isn't readily available in the size I use, so I'm going to have to do a workaround with a parallel resistor. I can just tack it on for now since it's just a prototype, but that will definitely something to be changed on the board before release.
I guess I can turn this into a good news sandwich though, I'm almost done soldering up the Deep Dish board, and I will not sleep tonight until I find out if it works. If it doesn't work first try I may not stay up and debug it, but I at least have to fire it up.

The good news is it works. Signal is passing, it is compressing, and every control is doing exactly what it's supposed to.
The bad news is the output level seems a little low. I may just not have a good enough reference as I'm not A/B-ing it (I'll probably do that tomorrow). Even with that bad news though there's a silver lining, if the only thing wrong is low output level that is just about the easiest thing in the world for me to fix, so it still won't downplay the fact that it works.
More good news is that the gain reduction indicator is working. It's a 10-bar LED display, I ordered green to try out, I'll see what other colors are available. It looks like the first LED will stay lit no matter what, but the display responds to compression levels quite nicely. I do need to adjust the range of it though, as currently the max I can get to light is 6, and playing loudly with the peak reduction all the way down (full compression) I should be able to max it, so I'll play with the adjustment on that.

Is that modeled directly after the la1a? Optical compression with tube gain stages right? I can't remember how that one ticked, I know it had a 6db boost
That's correct this is modeled after the LA-1A, and it has a toggle switch to set the level of boost. The switch is definitely affecting the level, but I need to A/B it with the original to verify that I'm getting the right levels. And I may have been imagining things, I had it hooked up to my amp and I don't remember what level I left the amp at, but I needed to push the gain almost all the way up to get it to what I considered sufficiently loud. I could use the boost to get past that, but (if I remember right) I shouldn't need to. I will A/B it with the original today and verify levels.
That looks quite nice! I'll be interested to see how this one ends up.
Curiosity question, since I've never tried an LA-1A: What's the benefit of having three tubes in there, as opposed to just one?
Also, an idea for another Sushi Box pedal, since you don't have any envelope filters at the moment... What about your take on an EHX Tube Zipper? Seems like something that would totally be down your street! (you know, because you don't have enough to do... lol)
