Since Thunderbuckers are self shielding, is there any reason to shield my bass before installing the new pickups, pots etc?

If the control cavity is shielded you're good to go. IMO even if it isn't there's very little chance of extraneous noise. In any case the pickup routes don't need to be shielded.
