The blends work where as you turn one wafer up, the other wafer is turned down. So the signal and ground is are opposite from one wafer to the other.
The Peavey factory pots are 20K, but 25K should work. Make sure they are blend pots, they have a special taper.

Not sure what you mean, but if anything 250k is wrong and it should be 25k ? I am getting signal from one side, so if I used a 25k I might get signal from both sides ? No criss-crossing ? I can solder, but have minimal electronics knowledge from two past assembly jobs.

No because the pickups are active already it is a low impedance signal
