Vegetarians/Vegans...What's For Dinner Tonight?

My girlfriend is a crappy vegetarian. A good 70% of her diet is cheese and bread.

I'm trying to make some more healthful choices for the both of us and I was a chef in a past life so now I'm forced to cook everything.

Last night was red lentil pasta in a homemade spicy tomato sauce. I split half of the sauce. One half I cooked homemade lamb sausage in for myself. For hers I put fake veggie sausage. Honestly the best veggie meat (to me) is sausage because you can't really tell whats in the real thing anyways.

Tonight, I'm making smashed plantains and jerk tofu.

Vegetable stew with green lentils, carrots, cauliflower, onions, vegetable broth, garlic, black pepper, salt, and allspice over brown rice. The rice is seasoned the same, I just cook it separately.
My wife is vegetarian, I am not or, as she says, not yet. :)

I just missed the chance to add brown rice to my grocery order, but next time

I'm not a vegetarian now, but I was for a decade and would happily go back to it, but my wife isn't one. But... summer is coming up, so time for aubergine burgers and grilled bananas.
