Vegetarians/Vegans...What's For Dinner Tonight?

Even the favorably lit, photoshopped picture looks like masking tape, how good could this be?
 
My wife and I do not eat any synthetic meat products. In our opinion, none of them are worth buying or eating even if they were free.
There are plenty of tastier and healthier alternatives.

Well, sure, let me share the point:

I don't think I'll ever stop eating meat altogether, but I want to incorporate more meatless choices into my diet. So my question for the herbivores out there is - what are you having for dinner tonight?

I'm not looking for your favorite meals (unless you happen to be having your favorite tonight!), or whatever you may consider to be gourmet meals. I'm hoping to get a good representation of practical, everyday meatless meals that I can add to my diet. So I'll repeat the question:

Vegetarians/vegans...what's for dinner tonight?
The OP seems clear enough. It couldn’t be that the idea of a meal sans meat somehow offends, could it?
 
The wife found a recipe for faux-rizo, a tofu substitute for chorizo. It's quite good and difficult to tell by taste it's not the real thing. The texture isn't quite the same, but mixed in a taco salad and it's great.
She also makes bacon bits with toasted coconut. Oh my, this is really good. We made BLT's with her spin on bacon. Mmmm, mmmmm.

Today was chickpea dumplings fried in ghee, green beans, tahini sauce, sauerkraut, celery-apple salad.
I read this and the other dinner options. I have to say. These various menus sound quite tasty. I just wonder how the dickens you find the time for all the prep and preparation? I am embarrassed of my menu. But by the end of the day I barely have time and energy to brush my teeth. I am somewhat envious.

Same here. Time is the major problem, but I'm going to try to make some of these work.
 
I don't find that our recipes take all that much time. Sure, the pad Thai took longer than making a salad, but it wasn't like I was in the kitchen for 45 minutes doing prep and cooking.
What really helps the wife and I is we make out a menu for the week, then buy ingredients for the menu.
We have in our fridge/pantry all we need to prepare our meals in the right amounts. Basic food stuffs we buy larger amounts of.
These healthy food delivery services are popping up left and right like they're doing something new and creative. It's called meal planning folks. You don't need Blue Apron to do that for you.

Tonight we had Japchae. This took maybe 30 minutes from start to eating, and that included time waiting for water to boil.
