What kind of cheese?

Any cheese that's been aged for 15 years -- like this thread.
There's a local joint up this way that makes a queso loaded with pieces of fresh diced jalapeno and habanero. It's most excellent.

But I like pretty much all cheeses.
One of my favorites is one that I've only had a few times in my life, but I distinctly remember how and where I first discovered it: I was an undergrad at music school circa 1981 and the drummer from my recital band showed up at a party with this oddly green-tinged cheese. I totally expected it to taste like bleu cheese...but no, this was exquisitely delicious in a way that even bleu cheeses fanatics will rarely acknowledge their favorite cheese can achieve. Irish Derby with Sage. Freakin' awesome cheese!
I'm all about that Gouda.
All cheese is good, except mozzarella. Most overrated cheese of all time. It's not bad, but it's not good either.

Fresh mozzarella is pretty darned good. That shredded stuff in a bag is just a necessary evil for some dishes.
My one desert island cheese would have to be an extra sharp Vermont white cheddar.
I'll concede that mozzarella of questionable freshness and quality is good on pizza, and the fresh stuff is good in certain applications like a Caprese salad, but it's not a tasty cheese. Not on its own.
No way, never pre shredded from a bag.
We make our own mozzarella cheese now, so no need to buy it anymore.

Another vote for Gouda.
There's tons of weirdly named specialty cheeses I've tried that were absolutely amazing, but can you really count those? It's like answering "what's your favorite type of music?" with "Neo-Pagan-Post-Blackened-Death-Grind"
