What to do with all these homegrown tomatoes?

I've been making this fantastic tomato soup recipe lately.

I'm lactose intolerant so the cream had to go, but lactose free milk is a perfect substitute. My blender is a hunk-a-junk, so i peel the tomatoes after roasting/before blending so it comes out smooth. Your cooking times may vary, but this recipe kicks booty. A small spoon of garlic-herb cheese like Alouette or Rondele is the perfect topping.
 
I take all of the ones that we don't eat right away, blanch, skin, and freeze. During the winter, they're pretty versatile -- sauce, pizza, etc.

At first frost last year, I harvested and pickled the green tomatoes. A family tradition.
 
My mother in law amazes me. She can keep tomatoes fresh until February. Use the larger varieties wash and completely dry them leaving zero dirt or moisture. Wrap each one completely in toilet paper (new roll only please and apparently paper towel doesn't work) lay flat in a cardboard beer tray not touching and keep in the cellar where they get lots of sunlight. It's crazy, summer fresh tomatoes in February.
 
Share em ! 98% of the the human race goes googoo for homegrown tomatoes. Not everybody has a garden. Save them from buying those hard little gas reddened cardboard flavored balls down at the grocery store !
