I think it might be the diagram. I'm no expert but looks like it shorts the jack to ground? Check out this one

Also worth mentioning pot values may need to be different for the active pickups compared to passive.
Here is the one I used.

Neither of those diagrams shows the output going to ground. Unfortunately there are two black "bus" wires joining a bunch of stuff. One is ground one is signal, and the signal does go to the tip in both, but it isn't obvious.

However, it is strange that the cap is wired directly to the output in that one diagram. Not right, but won't give you no output.

Double check that there is really 9 V (or close to it) on the red wires. That will confirm that the battery and connector are good. If you don't have some kind of volt meter it would be worth getting one. Even a cheap multimeter is a really useful tool.

Also double check that the tip/ring/sleeve are correct on the jack. The order may not match the diagram, so if you have a multimeter you can use the ohm meter for that. Also look for shorts to the shielding tape on things like pots and jacks. If you don't find the problem you could try disconnecting one pickup entirely, then connect a 9 V battery directly to the pickup power connector (i.e.: not through the sleeve of the jack) and the pickup output directly to the tip and ring of your jack. If you have sound then at least you have proven the pickup is OK.

And I just realized I'm using 250k pots. I'll look for some 100k
Seymour Duncan uses 100k for their active pickups. EMG uses 25K. Who knows what the MEC pickups are designed around. I had a quick look on their site but their wiring diagrams seem to show part numbers instead of values; they really want you to buy their wiring harness.

So I found A25k and B25k pots.
Whichever is the right one?

I wouldn't worry too much about the pot resistance for active pickups. For passive pickups the potentiometer load can have a significant impact on the tone/level, but for active pickups the output impedance is less and thus lower value pots can be used. In your case, you can definitely use active pickups with 250K V/T pots and no issues.

Taper (the difference between A and B pots) is a personal preference but I tend to use audio (A) tapers. They have a fairly steady perceived change in level across the rotation. Linear pots (also called B taper) tend to have very fast change at one end of the rotation and very slow change at the other. Some people go for that kind of thing. FWIW Fender uses A pots.
