I think some sort of older looking finish would compliment that. I would say stay with milk paint, but it's your decision. If you do decide to dedicate that neck to that body, which I would recommend, you should strip it, and refinish that in whatever fashion you decide to do the body. I...

I'm not a builder myself, so I can't comment on the truss rod, but I really like the refined body style. I think the bottom design, without the jagged cut on the lower bout looks the best.
