thinking about trying the demeter mini or the m700 for a clean head.

Everything sounds better with Monique I've used it with an EA Doubler and a couple of different AI heads it sounds very good with those as well. Actually my favorite is the V4b, I know not all that practical

I have 2 of the 210AVs and I'm pretty happy with the sound for UB and EB. For small rooms, 1 works really well. For bigger rooms, the stack is a thing of beauty. I can hear myself!
I use a PF350 or PF50T depending on the situation.

Perhaps I should get my old Dynacord Bass King rewired for the 4 ohms of my AI cab. And get myself a Fdeck hpf to go with it.

I just bought one of these 210AV's, and it sounds great. It works great for UB, and even for 5-string slab bass it sounds great. Very surprising amount of sound coming from this super light weight cab. You're right about the "organic" mid range it produces. It eq's well, and it really projects my upright with my Ischell mic very nicely.
