+1 for local steakhouses. Here in Las Vegas the restaurant biz is super competetive so you can find great local joints at the right price. I'll eat at the chains if I'm just trying to get fed, but if it's a date with my wife I'll seek out the local goodness.

For a while, the Outback where I used to live had prime steaks. One time I order a prime ribeye, medium rare. Seared to crisp perfection on the outside, perfectly warm red on the inside. Second best steak I have ever had at a restaurant! My wife loves the coconut shrimp, it is by far the best of any of the chain places.
