I'd go for two B210s because each speaker will then get an equal amount of power. There's also the issue of cab matching that gets brought up quite frequently. You'll probably really enjoy whatever arrangement you end up going with, though.
I have a pair of SB112s and they sound tremendous. I've never used a B210 but people really seem to like them. You can't go wrong!

The guy that owns the vintage fridge doesn't want me to gig with it so I'm in the market for some new cabs.
I'm pretty sure I'm gonna go with another B410NEO in 4ohms (the power amp is stereo and will take a 2 ohm load on each channel and my current cab is in 4ohms) as well as 2 more B410NEOs in 8ohms to use on the other channel in my loud band and also to have an 8x10 setup to use in my more straight forward band. That way I can run my GK MB2-500; which will only run down to 4ohms, clean (no distortion,...mainly just envelope filter and compression) for the straight forward band.
I love how clean the GK sounds but am not quite up to the volume; so pushing a little more air and getting a cab closer to ear level is what I'm going for and hoping the extra speakers space means I can back off on the gain and volume. Then I can combine all the cabs and have a thick wall (Yammy Pre + Ampeg poweramp + 4x410s) of ear assaulting, fuzzed out, feebacking bass for the noise/art/subversive/rock band. Some might call it overkill,....I don't.
I've had my current B410 NEO for over 3 years from know and aside from a wonky tweeter level knob,...haven't had any serious issues with it. It's done many a gig for me and always served me well. My money's been too wrapped up in effects for the past 2 years so it's definitely time to invest in some additional cabs. Oh and Dave's shop is literally a twenty minute drive away. Dave's a cool cat and supportive of the local music community,...it's a shame all the hipsters around here rock SVT-CLs and refrigerator cabs they bought from Guitard Day Care Center.

Modular = win!
Having two cabs means you can use one for smaller stuff or both when you need. I have a B210 and B212 and it works great!
I've always wanted to try stacking two 2x10's vertically!
