When you cook with it pretty much all the booze flashes off. It's actually a great method for controlled heat dosing. I prefer tequila infusions for chicken dishes, but rum is my favorite for most other things. I grew most of those peppers BTW, although the Fataliis came from a friend's greenhouse.

Nice! I just starting experimenting with some bourbons sauces for beef and am going to try mixing my own blend and perfecting it over the summer on the grill. If I have any notable successes I'll be sure to share them here :thumbsup:

For slow cooked beef I like vinegar based aged hot sauce in red wine or balsamic vinegar. I have about half a dozen blended sauces and I do re-blends every year.
