I can't believe no one has mentioned Black Sabbath yet. For me, bass only existed on the album sleeve where it mentioned the band and the instruments they played. Geezer Butler introduced me to the bass guitar and what it could do to enhance the band's sound. Chris Squire comes to mind as well.
Surprised nobody has mentioned the band Mudvayne, one of my personal favourites. Ryan from mudvayne was schooled in classical (I think) and is quite an accomplished musician, not just a heavy metal bassist. check out the videos of the song dig and severed. Dig is pretty cool all the way through and in the middle of severed is a double tap solo.

Thrice generally has some interesting, busy lines. Counting Crows mix the bass into a more forward position (At least on "This Desert Life", see "I wish I was a Girl").

Maiden is just epic. And Gorillaz actually has great songwriting. Check out the new disc Plastic Beach for some really tasty simple bass stuff.

Actually, most of the pop records from the 60's -- both British Invasion and the American "Wrecking Crew" stuff -- you can HEAR the BASS. And mostly with some passive Fender. Today, with all the high tech stuff, the bass often gets buried.
