CV stands for control voltage, which was sort of the analog version of MIDI for modular synthesizers. It's still used on most analog synths, even new ones, which also have midi. The moogerfooger you're looking at has multiple CV inputs to control each parameter. Think of it like an automatic hand to turn the knobs (they don't actually turn, it's electronic) , but which can do so much more than you can physically. An LFO is a low frequency control oscillator, which is used to "turn the knobs" electronically, and is the most common source of CV. You can use different waves, like a sine or square wave, and change the speed of how the CV turns the knob back and forth. "Sample and hold" is another type of wave which is random, so you get random settings constantly changing a parameter like delay time or feedback or the mix between the delayed signal and the source signal.
Or you can use white noise to modulate a parameter, which can get crazy effects. Use noise to modulate delay time? It doesn't make sense but you can do it. And if you get a Cv mixer you can mix say noise and sine wave. The possibilities are endless, which makes the MF so great. You can even use a midi to CV converter to sequence it.
My main setup is to use a sample and hold at low speed (meaning the random changes happen slowly) to modulate the delay time. You get a really unique chorus effect that doesn't sound like the chorus pedals you usually hear. As if the analog delay doesn't sound analog enough, the random modulations make it sound even more analog, like a wobbly tape delay.
