The original version of I Fought The law was by The Crickets after Buddy Holly.
I think any any cover that SRV did is better than the original version.
But here's one of my all time favorite songs that is better than the original from Texan Roy Orbison.
A little tangential perhaps, but many people nowadays think that Take me to the River was originally done by the Talking Heads. I personally prefer the original version but I like theirs, too.

The Clash (cover).
I love covers that draw out the sort of profoundness of the song in a new way. Like Joe Cocker's version of "With A Little Help From My Friends," or Jeff Buckley's version of "Hallelujah." Or, um, The Cardigans' version of "Sabbath, Bloody Sabbath..."
