How about a third album...
Alice Cooper - Love it to Death. (and a number of great follow up records)
Bob Ezrin was able to steer them towards writing songs that were a bit less avant garde.
I also think some bands take a bit to hit their stride.

Sheryl Crow's second album (ironically, it's called Sheryl Crow) is a great album. solid songwriting, performance and production.

I would have to go with the Arctic Monkeys. Their first album “Whatever People Say I Am, That’s What I’m Not” is really great, but their second one “Favourite Worst Nightmare” takes the cake for me.

Paul’s boutique is the first album that comes to mind. The beastie boys could have continued with their rap metal combination, but they took things in a whole new direction which embraced music at a completely deeper level. It’s one of my desert island albums
