Favorite comfort foods?

and yeah... anything pasta works for me ... left over pasta, fried (to warm) in a non-stick saute pan with a little E.V.O. oil, a little onion, finish by craking an egg or two into the pan & scramble - heat level as appropriate for scrambled egg - finish with freh grated parmesan - kinda like a decontstruted carbonara ... bacon and bacon fat in stead of EVOO works too - doesn't need to be fancy to be comfort for sure...

Get a good recipe for Pasta Amatriciana - pasta, garlic, tomato, bacon - how can that be bad (other than for the choleserol level ...)

I gotta go cook...

Hmmm, that sounds easy and tasty. I love to riff on the carbonara model, everything is good with bacon in it.

Fill up a roasting tray with 2 chicken breasts, cut onions, peppers, courgettes, couple halved tomatoes, pour olive oil over, sprinkle dried herbs in, get hands into it and coat everything, in the pre-heated oven, smoke joint, forget what's going on, do charcoal drawing of a chicken with the remains, go to chip shop.

Mediterranean roast vegetables, I think you'll like it, quite quick to prepare and great taste. I usually use mixed herbs but a little Rosemary is quite a nice add too. Oven on about Gas Mk6 and give the veg's a little stir around from time to time, spoon some of the oil over to stop them drying, will take about hour and half cooking time? Maybe less ; )
