Favorite Hot Sauce.... GO!

I guess I have a broad definition of "hot sauces" and "condiments". To me, hot sauces are just a sub-family of condiments.

This stuff is a condiment but I wouldn't go so far as to call it a hot sauce. Having said that, if you like hot sauce, you owe it to yourself to give a taste!

I think I will :) My personal fav is wasabi mayo and mustard. French's mustard is always numero uno but that wasabi mustard is tied with guldens spicy brown in my book.

I make my own Wasabi or Sriracha mayo, just toss it in a dipping sauce bowl and mix it up.
Sometimes I just use sambal:

yes, mayo is fabulous on fries, just ask anyone from the Nederlands

they also put carrots & other veggies in their mashed potatoes

I first tried spicy mayo at a poke place. Their's was much better than the Lee Kum Kee stuff I found in the store but they're all good. I like it with fries and it does wonders for sandwiches. I also realized it's just a better version of Burger King Zesty sauce.

Tobasco can't be beat. Salt, pepper, vinegar. Nothing else needed. But I must admit the green flavor is great on eggs, Hawaiian pizza, lots of stuff, actually.

As a child when we were in trouble we got a drop of Tobasco on the tongue. It burned back then. Now, I can chug the stuff. I'll ev2n cool eggs just to have something to put it on. But I cook and marinate a lot with vinegar. Still haven't made pickles yet, but only because no friends or family have grown any cucumbers. Not sure if they grow around here.

Re! Cucumbers. About where are you? They do need lots of light and water.

After decanting this makes a wicked jerk sauce base, even more so when using rum instead of tekillya.

I also do aged/fermented vinegar based styles (think Tabasco, but hotter) and lots of other DIY types, mostly with peppers and herbs I grow myself. This forum is a pretty good starting point: Hot Sauce Making

I think that batch from 2015 is just about gone now. We took a year off from growing hot peppers last year, but I think we'll dive back in pretty hard in a few weeks. I still have 4 different DIY vinegar based sauces in stash for now anyway though.The 2 year batches are just coming into their own right now, actually, although I tend to go for the 4-5 year one (re-blended twice) most of the time.

Talk about chugging: I have a friend who does hot sauce drinking contests for side money. Usually with good ol' Franks.
