Amusingly, I never checked to see if any of it needs refrigeration... it just goes in there with the other condiments.

Depends on my mood. No one in my house likes food as hot as I do (and I admit I am more tame than I used to be). But stores, or store sections, with different spices and sauces are like a toy store to me.
j-raj sent me some scotch bonnet seeds last year and we made five types of hot sauce. Some straight pureed peppers, some fermented, some cooked with carrots and onions, all hot as blazes!
This has been my favorite so far..............gets ya "coming and going" if you know what I mean!

If it needs to be refrigerated, it's not spicy enough.
I finally convinced my mother that you don't need to refrigerate hot sauce.

They fire roast (read burn) the habaneros first. It's got a great smoky flavor to it. Not incredibly hot, and it's kinda thin, but it's great stuff. Makes great Bloody Mary's!

Hot enough (Scotch Bonnet and Habanero) & flavourful. Just the right balance.
But when it comes to chicken fried steak, biscuits, gravy, and hash browns it has to be Tabasco.
I'm a big fan of Melinda's naga jolokia (ghost pepper,) and their fire roasted chipotle is pretty nice too. The ghost pepper sauce has mango in it and starts out a bit sweet, but the heat kicks in in waves, more than a few of drops can reduce me to a giggling sweaty fool. Fun stuff, but hard to find locally..
I recently found el Yucateca sauces at one of the local markets and I really like their "black label" habanero sauce, I've gone through a bottle of that plus one of the other red habenero sauces (I didn't like it as much as the black.) The Yucateca stuff is reall cheap here, about $2 per bottle, looking forward to trying that in a Bloody Mary (thanks for the idea Phalex!)

Another vote for El Yucateco XXXtra Hot Habanero.

The black has bit of the "liquid smoke" flavor happening, and for me, a little goes a long way.

They actually make 4 kinds - the green (bright lime green color), the red (fire engine red color), the black label (black colored) and my all-time favorite, the yellow/brown-colored XXXtra Hot Habanero.
Edit: Up to 7 different kinds now - I just discovered Caribbean, Chipolte and Jalapeno versions while browsing hot sauce sites online.

They're both delicious. I turn my pho red with the stuff. Soo good. It's great on eggs. Steak. Probably donuts. It's amazing.
