Amusingly, I never checked to see if any of it needs refrigeration... it just goes in there with the other condiments.You keep yours in the fridge?

El Yucateco makes 3 different kinds of habanero sauce. This one and the black label are the best.

Yup I figured it out a while ago. I prefer this one:Along with sriracha, my favorite pho joint has this sauce setting out on their tables. I think it may be just what you're looking for.
