IMO, I don't think you'll be happier with the 200. The 500 has more headroom and the 2X10's give you far more ability to cut through the mix without any boominess. Take the time to learn how to eq properly - try the bright button with the tweeter turned off and eq to taste. That's the one I'm thinking of where the 500 just was not cutting it for me, sound wise. I'd turn it up and more woof-mess, even dialing down the bass etc. Granted, I don't know what I'm doing with it!
Anyway I think I'm going to go ahead and get the 200W, with crossed fingers!
I just had session this afternoon with my power trio buddies and as always, it got loud. Guitar player playing through a tonemaster head with 4X12 cab and heavy drummer - I never had gain past 11 and 1-2 o'clock on volume. We played some stuff haven't done in years - "Trooper", "Behind the Wall of Sleep", "Free Will" and I was loving the tone I was getting and cutting right through. My jazz never sounded better! No fart, just power
Wise man once said "A Fender just sounds better through a Fender"! But I digress....
Don't give up on your 500! The sound you want is in there, just need to take the time to find it!
