There's a particularly sinful recipe of waffle mix used in most all the U.S. mid-level hotels. One of my fun activities is to make my own waffles in the hotel breakfast section in the morning. I discovered that the mix is called "Golden Malted." It has a hint of caramel and vanilla and you have to add melted butter to the batter.

Is it probably death by cholesterol? Probably. Is it outrageously delicious? Definitely. Well tomorrow I'm making Golden Malted waffles with my Waring Belgian waffle maker. When I do, wife Carey rolls her eyes. To her a waffle is a waffle and she'd much rather have the cantaloupe with blueberries anyway... :rollno:

A bit of melted butter in a waffle recipe is standard. How much of a bit is the problem.

The word malted in the name of the mix is a bit of a giveaway. They say that malted barley extract is used.

I like to use a splash of Bacardi 8 year old dark rum instead of vanilla. It adds a complex taste. That in combination with buttermilk and a small amount of oat flour (use a stick blender to grind oatmeal) substituted for regular flour, makes a very tasty pancake or waffle. This can also work to enhance a batter mix.

Funny thing, then. People in my immediate space quickly learn pancakes and waffles are so low on the rungs of my personal ladder of craving that they touch the mantle of the planet. So low that (stores incoming, duck and cover!) so low that when I am served blueberry pancakes in bed, the signal conveyed is this relationship is over. And I'm gone before noon.

But yeah, seen these waffle things in hotels all over the place. Did get a really pleasant surprise at the hotel in McAllen, Texas. The breakfast spread included a made-as-you-watch omelet. Kind of like a breakfast Subway. Definitely not a 12 egg omlet, OMG LOL. I will say my hosts in south Texas treated me very well. Always treated very well in Texas. (But also happy to go home.)

Like that time when the tornado touched down and I'm running through the building following the beeps of the Uninterruptible Power Supply so I can bring the servers down safely. I find the UPS running a Macintosh in the graphics department and I'm all if I have to stay all weekend regen these severs, someone will pay. And wondering who to blame, whoever signed off on this contract, or the newspaper who insisted on saving a couple bucks ... Ready to read off the riot act when the systems manager shows me over to what is left of his house. Tornado went right up the street, rolling an 18 wheeler through an entire block.

So wound up saying something along the lines of I put your fileservers back in order. So maybe it's best I lay off the waffles and pancakes thing, but man do waffles ever do a tornado touchdown on my own bodily fileservers.

However, today I have a few clients to attend to. Then I have an afternoon jam with a guy who's been recovering from major health issues, so this is the first time we've had a chance to jam in a few months. That will take place during my usual pool time, and after that I am having dinner with some neighbors. So, no pool for me today. There will still be wine, however.
