I'm still not clear on privacy and visibility.

I've been on G+ for a total of two days (three if you count today), it's not entirely clear to me how and where you set your privacy. I know there's a privacy filter, but it doesn't do what I want for it to do (filter out what random people are able to see, even if they are in a friend of a friend of a friend's circle, you can still see all their info). I don't want to be entirely visible to some people. I don't mind "friending" someone, but I like to have some of my info unavailable.

Maybe it's already there and I just haven't found it yet.

Go into the "view profile as" mode and type in the person in question's name. Then surf your own profile to see what shows up in their view.

Which parts do you want to make restricted? You can spec restrictions per line in your profile, or per folder for pics and the like.
