I went to school with a family that all started to go gray in their early teans, the girls also. By the time they finished high school they were totally gray. It happened to their family for generations.

Depends on how long your hair is and what kind of effect you want to make.

Mousse works on mid to long hair and sort of adds body, you'd use it for bigger hair styles. You'd probably need a hair dryer because you put it on when your hair is wet. If you don't use a dryer your hair will just end up crispy.

Gel is for slicking down or sticking up - short hair

Wax is used for more sculptured shapes, hair arrangement if you will. short or slightly longer hair. Lots of guys I know use this. Use on dry hair only. Apply to ends of hair only (if you put it anywhere need the root your hair will look really greasy)

Spray is used to hold a style into place, kind of a finishing touch.
