I mean at that point you're just getting a Venus with HPF/LPF instead of cabsim. It will probably have a different EQ.

Well, my current DI is an Aguilar Tone Hammer. I'm not unhappy with the Tone Hammer, although, I will say that it does sound better with the recent additional of the Elementary pedal.
Just added a few more stock units of Finally, More, and Underground Accelerator on the website. I try to fill backorders as quickly as possible, but the goal is always to have things ready to go so I don't have to, so that's what I'm going to be working on for a bit while I wait for the new Venus prototype circuit boards to arrive.
EDIT: Just got a Detective finished up and added in as well. I have a couple Slampeggs that are almost ready, they'll probably go up tomorrow.

I think you meant to type Level instead of More in the More block diagram. Although the control that the circle represents does give you more More, so it’s not really wrong.
And that's why I did that. The knob isn't really labeled on More, it's just...well...More.
It does function as a typical volume/level/master/whatever-you-want-to-call-it control though.
I looked and didn't see it if it's there...... Is there a demo of "More"?
Must admit, I've come back to that diagram a time or two and am having trouble understanding how the routing would impact the sound. I'm interested in pedal design, but I presently know basically nothing about it.
The diagram doesn't really reflect routing as the parallel stages should more accurately be shown stacked on top of each other. A question came up a while back about splitting the signal to feed separately into the stages, and that's not what's happening. Running tube stages in parallel works differently than individually and has some neat sonic benefits, which is why More sounds different (pronounced: better) than a lot of pedals, even A Little More, which is the exact same circuit but without the parallel stages.

Seeking opinion from the Sushi lovers here that have experience with the different pedals. I have an UA now and it is a wonderful pre. I like it as always on with just a touch of breakup. I am also in a never ending search for the perfect really dirty high gain drive. UA sounds great this way, but don’t want to switch while playing.
All of this to ask which pedal do you think has the best really dirty drive? UA, JC Emerald, Dr Watson, Elementary, or the dirty channel of Dreamcatcher?

Is "Better" the product name for the next version of the More?
I don't have any experience with any of those pedals, except the Elementary, but if you are looking for "really dirty", then the Elementary is probably not what you are looking for. Others have said the the "...Elementary has 90% of the gain of the Dr Watson, so maybe that's not what you are looking for either.
Of the pedals that you listed, I anticipate that others here will probably say the the JC has the most gain.
I think Dreamcatcher has the most gain available, on the dirty channel, and the clean channel is basically a UA, so it could fill both rolls on its own. It's just a question of if you like the character of the gain on Dreamcatcher.
I have a JC Emerald and [Invalid or Expired Link Removed] and as much as I like the SS the JC Emerald takes me to a happy place for a driven amp sound. I also spend a lot of time mixing and matching preamps with my drive, fuzz and distortion pedals for different sounds and so far everything works fabulously.
I currently use the SS as a 2 channel overdrive with Blue for crunch and Red for mayhem into a UA on a board for Rocking bass, piccolo bass and guitar.
I've been searching all over for a sound sample of the JC Emerald and just can't find one. Any chance you might be able to snatch a sound sample with a few different settings on it?
I have not heard or played the JCE, Dr W or Elementary, but the UA is my fave "tone" pedal, and I recently bought a D-Catcher as well. The red channel in that box will get as nasty as you want it to.......even with a lower gain tube like a 12at7 and still durn filthy with a 12au7. I love having both available in 1 box, but you should ask yourself if you want to have another UA in the form of the DC's blue channel? Note that 2 smaller Sushi boxes take less space than the DC (about .5 inches), so unless you'll have use for (or want to flip) your existing UA, it'd be cheaper and take less space to go with another single tube Sushi box.....raw fish food for thought.....
