Thunderbird Club

Hi MrKeef, welcome to the culinary centre of TB.

No idea what's on yours but my E string is quite tight using Rotosound 66, your's sound like a very light gauge. Anyway welcome to the Tbird club and please do join in if only to dilute the rubbish this lot spout day in day out :)

OI! I heard that!! Bunch of bar stewards they are :roflmao:
What RS66 gauge do you use?

Thanks Red! Looks like barbecue is "the taste of America" in these 2 examples (CRIKEY!!! That sh!t's expensive!). What's the difference between American style barbecue and Australian?

A trad Aussie BBQ is meat over flames, either open grill or on a hot plate.
Traditionally no lid, and not so much into sauces, marinades and mayonnaise / condiments.

I believe you would refer to that as a ‘grill’.

Of course there is now a wide variety with lids, smokers etc available. We are getting fancy.

I still hold a place in my heart for a good, old fashioned ‘sausage sizzle’ beloved as a fund raiser for many organisations from junior sports clubs through to charities.

Piece of white bread, squirt of Tommy sauce, a bbq’ed sausage with optional cooked onions. You fold up the sides of the bread around the contents. One hand eat, other hand for a stubby. She’s beautiful mate!

You don't ever put bacon or anything in a grilled cheese toasted butty? :jawdrop:

We bought a Weber smokey mountain thing a few years ago to hot smoke food. We found some nice recipes on a WSM forum for things like brisket and pulled pork and I think we have those down quite well now after a few disasters (with the brisket). Trouble is you need a huge piece of meat to work really well and you need a whole crowd to make the best of it so it tends to be an occasion rather than an intimate meal for two

Tried a butterflied leg of lamb? Bone goes to the dog. Marinade in rosemary, salt?, pepper, olive oil. Skin done on the grill, close lid. Turn over bit past 1/2 time.
Get a 1 kg piece and cook if that way and it takes half the time of a keg, say 1hr approx. is beautiful!

Edit: pretty sure there is a lemon for the juice and some runs in there also

Exactly! Brisket is an event as much as it's a meal. It's a hard cut of meat to cook right but once you figure it out it's quite good. It's also largely a Texas thing. In SoCal we focus more on Tri Tip than brisket. Much easier to cook and always tastes great with a good chim sauce. Give it a try, you'll love it.

As for the butty samies - in our house (with my English wife) we always have thick cut Canadian bacon or thin cut ham with brown sauce on ours but the term "butty" is never really used here to describe a grilled cheese sandwich. The term "Butty" around here is used more to describe the Kardiashions than food. Our grilled cheese is just that - grilled cheese. No meat, no veggies, no sauce. Just buttered bread with American cheese pressed on a grill or griddle until toasted and melty. Yum!

What is Tri Tip ?

What is Tri Tip ?

I have, and it's scrumptious.

Tri Tip. Depends on how it's prepared.
