LOL - I was thinking the same thing on the substitute. Interesting thing about Jambalaya is you can substitute a number of main meats for your favorite meat, but you don't want to axe the andouille it's what makes it what it is - Jambalaya.


Don't forget the fainting goats, ya gotta have at least one of these in the herd...

My friend in HS had a good theory - after God made man he then of course made woman. The man, being made before the woman, had not been made with the ability to know what to say to a woman. So God then gave man this ability. But since man was given this gift after woman was made he then would only know what to say after the fact.

Well that’s the recommended substitute in the recipes. Andouille or Chorizo they say.

No clue what Tasso is.

Who is 'they'? Probably The same people who would substitute cottage cheese for ricotta in lasagna...and velveeta for mozzarella.

Tasso is a spicy Cajun pork shoulder, typically used in jambalaya or red beans and rice. Again, very different from chorizo but that's also supposed to be a substitute for it.

I don't see the point in calling food what it isn't. If you're going to make up the ingredients, make up the name, too. With chorizo call it something Mexican, like 'Montezuma's Revenge'.:)

Ive always wanted to use bag end sealed 2x10 or 2x12 subs. Are these the 12's?
yes.. 2 X 12 1300 Watt..72 lbs/ea...impressing....at first I was ticked cause they were on the wooden stage and were coupling with my rig creating this unpleasant standing wave. Hate it when that happens....finally got it resolved but the attitude of sound folks is always the same...WE tell YOU what sounds good or not.....sends me over the edge sometimes...it's like they use the musicians (we, the paying customer) as experiment subjects for their latest gear acquisition....then, when one complains they try to condescendingly tell you (technically) why you're wrong....idiots..in the end I said, you shelve that sub EQ setting or else....it worked..

Lots of sound guys are excellent. But some can definitely be like conceited lead guitarists or diva singers. The sound varies across the venue and the sound guy is in the hot seat for all of it. I invite the sound guy to come stand where I am and see what I am experiencing. That usually goes a long way, because tgen they understand I’m not playing diva.
