It's a very subtle flavor and only worth getting at a top quality sushi place, or seaside if that's an option. Fresh out of the water is obviously best but even the best sushi place will have at least day old. Any older or frozen and the taste is really off putting.

I find almost all frozen seafood to be disgusting. I can deal with frozen shrimp. Everything else needs to be fresh, and raw or lightly cooked. I could eat raw fish and shellfish all day, every day.

As could I. And fresh is always best, but the frozen stuff is fine for cooking most of the time. Not ideal, but still pretty good.

But sea urchin, like oysters...really all shell fish, is gross if it isn't fresh. Especially sea urchin. It takes on this really bitter awful flavor that just ruins the whole meal. A lot of sub par sushi places serve it on a little hollowed out cucumber cup rather than seaweed like in your picture. That way the cucumber flavor masks the awfulness of the frozen uni.

Raw oysters have been off the menu for me ever since my girlfriend at the time and I got really sick from them. A very reputable establishment too.. That said, oysters can carry pathogens such as Vibrio vulnificus which are naturally occurring and have nothing to do with the condition of the oyster or the waters they came from. They have to be cooked to eliminate the risk.

And one of life's greatest pleasures is also elminated. I only eat oysters if I can see the ocean. It's a risk, but it's worth it to me.

From time to time I watch documentaries and archived news footage of things that happened in the past, say 1930 to 1950,

I notice in some close-up crowd shots there is always a person looking directly at the camera who knows he or she is being filmed.

Now I am the person looking directly at that person who is looking at me on screen.

And I wonder if, at the time, they could possibly be aware that a person from the distant future is now looking at them and wondering if they have any idea that they knew someone would be...
 
I've reached the pinnacle, but when there's nowhere else to go it's time to just limit human contact.

I asked for the day off from work tomorrow. Mental health day.

Why will you have a hard time sleeping?

It's really not very interesting, except for the fact that I haven't mentioned it. I'll be fine as long as the psychopath leaves me alone. I have a police reporr from today to prove they exist and are not a figment of my imaginations.
