So, I set it up to factory for a starting point. So my question is:
Anyone else's PUs this recessed to get 6mm clearance from pole to bottom of string? I see all the 4str PUs have poles set north of the cover; but I don't see how that's possible on 5/6str to maintain adequate space!

Excellent. Good thinking on the static approach. Had to walk away for a bit. My low trims are at zero for the neck and midway for the bridge, may experiment w/ them as well. You can see its 4mm between the B string and top of the pickup.
2nd pic shows at least how I like the poles under the G to be for bite.
I use Mesas which can handle the high output of Wals and my goofy setup without me having to turn the internal trims down on the Wal preamp. i might have the low trims back a hair, but only on a couple of them not all.
This just isn’t the case with Wals. Why do you think it is like that? Less Wals available overall, more private person to person sales occurring in groups like this or is it that Wals basically disappear when they are listed because they are more sought after, or... I understand being in the US is a factor too.

@Les Fret I am refereing to used Wals. As of now, there isn't one here in the classifieds, there is a lefty fretless and single pickup Wal Pro on Reverb and eBay - so I am not seeing plenty. I have looked on BassChat and most of those folks aren't willing to ship to the US. The FB group doesn't look to have any available currently either. All of which is fine, I can wait and I am having a conversation with a private seller too.
