Yeast bread - there's almost no way to do it wrong (though there are plenty of strange folk on the internet who are sure that everything you do is wrong - just ignore tem and it will come out bread - anyway.)
My lazy-bleep pilaf (because I'm WAY too lazy to stir risotto forever):
Shallots or garlic or both, olive oil, large non-stick frying pan with tight cover(don't use it yet.) Onions in a pinch.
-fry slow for a bit
add rice (brown, white, sushi, brown sushi, arborio, jasmine - whatever floats your boat)
-fry a little more, stirring to coat rice.
about as much wine (or sherry you'd drink - never use "cooking" sherry or wine) and about as much water as rice (ie, 2x liquid) red wine works just as well as white here. Vinegar (balsamic is nice) can work if you or a guest have major alcohol issues.
-preheat if you want to be picky about it
-pour into hot frying pan of rice and cover immediately (should start off with a nice big boil)
-turn down the heat to just a simmer
-leave it as long as it takes to cook the rice (roughly 20 minutes for "white" rices, 40 for "browns")
Optional cheese or egg tossed on top and re-covered for the last few minutes. Melt cheese, get yolks runny or hard as you prefer.
Quantities intentionally vague. Add things you like if they seem like a good idea. Vary to suit. Can come out looking less than attractive, depending what's in it, but if you stick to things you like it should always taste fine. More care for appearance may be required if feeding picky children rather than yourself.
