Yeah, they got behind and had supply chain issues (like everyone else) and I think they lost 1 person as well.

The JB is empress and 7.5 lbs. I looked for ages to find a real 8.4 lb SB2
The SB2 has been too aggressive for some projects.
I could see a conventional P pickup but is there a humbucking bridge pup that would bolt in?

Rather than change pickups, have you considered tapewound strings to help tame the existing one?
I had not considered this.
I do like the whirring of a mellow nickel round wound with conventional pups though.
The crazy part for me is that I had vague thoughts of this, minus the quilted top and a maple board instead.
I hope the stuff in the band gets sorted out, so I can kinda justify my own custom G&L.
I know what you mean, I have rounds on my Jazz but tapes on my Kiloton and Flats on my SB-2. I am thinking of swapping the strings on the kiloton and the SB-2 because I think the tapes will work well on it (and I don't really play the kiloton since I got the SB-2).
It's probably worth trying tapes (or even pressurewounds?) because that is a lot less effort than changing pickups & easily reversable if you don't like it.
I'm partial to Elixir nickel wounds, which are just a touch mellower than un-coated nickel roundwounds. Recently, I put a set of Pressurewounds on my SB-2, and man, were they bright! Someone told me to give them time to break in. I did, and they did. I now like them on that bass. Another consideration might be Thomastik-Infeld Jazz Flats. They are the only nickel-wound flats I've found, and they're comfortably mellow and a dream to play.

Next step is white pickup covers. Do any of you have recommendations on where to get white VVT knobs? All the ones I've seen online seem to have sharper edges and a matte finish, where I want it to look like the standard knobs just in white

Very nice !! Possibly one of the last, I've read the M series is discontinued at least for the built to order. Maybe they're still available CS, but that order was put in a while ago. That bass should be nice and light with the empress wood body, congrats !!
My SB-1 has Roto Bass nickel-plated rounds which are warm rather than aggressive. Also pickups are nice and low, with the pole pieces tweaked to add a bit of definition. I treat 8 on the volume knob as 10, with the stretch from 8–10 as a way of adding a treble+bass boost when needed. I also have the tone knob bobbing around between 5–10, depending on context.
Offering this as advice to an SB-2 owner has two fat problems: firstly, the tone knob is doing a lot of work; secondly, there's no getting round how close that single coil pickup is to the bridge.

I wonder if changing the volume pot value would make much difference.
I have the Ernie Ball Slinky Flats (Cobalt) on a non-G&L bass that to my ears are bright but still quite full. And they are fun to play. Take a little off the tone knob and they are quite mellow and vintage sounding. But they do cut through when needed. I use either StringJoy or DR nickel rounds on everything else.
I was just perusing Sweetwater and noticed that they don't have Fullerton Deluxe L2Ks or L2500s listed. I wonder what that means. They say if something's back ordered, these listings are just gone.
